Ingredients 

Main Ingredients

  • 200 g Vermicelli Noodles
  • 200 g Shrimp peeled and deveined
  • 1 cup Carrots julienned
  • 1 cup Cucumber julienned
  • 1 cup Bean Sprouts
  • 1 cup Fresh Herbs mint, cilantro, and basil
  • 1 cup Lettuce shredded
  • 1 cup Crushed Peanuts

Dressing

  • ¼ cup Fish Sauce
  • ¼ cup Lime Juice
  • 2 tablespoon Sugar
  • 1 clove Garlic minced
  • 1 chili Red Chili sliced

Instructions 

  1. Cook vermicelli noodles according to package instructions. Drain and set aside.
  2. In a pot, bring water to a boil and cook shrimp until pink and opaque, about 2-3 minutes. Drain and set aside.
  3. In a mixing bowl, combine fish sauce, lime juice, sugar, minced garlic, and sliced red chili. Stir until sugar is dissolved.
  4. In serving bowls, divide vermicelli noodles, shrimp, carrots, cucumber, bean sprouts, fresh herbs, and lettuce.
  5. Drizzle dressing over each bowl and top with crushed peanuts. Serve immediately.
