Ukrainian Red Borscht Soup Recipe
A traditional Ukrainian soup made with beets, cabbage, and other vegetables, often served with sour cream.

Main Ingredients
- 2 medium beets peeled and grated
- 1 medium carrot peeled and grated
- 1 medium onion chopped
- 3 cups cabbage shredded
- 2 medium potatoes peeled and diced
- 6 cups beef broth
- 2 tablespoon tomato paste
- 2 cloves garlic minced
- to taste salt and pepper
- 1 tablespoon vinegar
- 1 cup sour cream for serving
- 2 tablespoon dill chopped, for garnish
1. In a large pot, bring the beef broth to a boil.
2. Add the beets, carrots, and potatoes. Cook until tender, about 30 minutes.
3. In a separate pan, sauté the onions and garlic until golden. Add the tomato paste and cook for another 5 minutes.
4. Add the sautéed onions and garlic to the pot. Stir in the cabbage and vinegar. Season with salt and pepper to taste.
5. Simmer for another 30 minutes, until all vegetables are tender and flavors meld together.
6. Serve hot with a dollop of sour cream and a sprinkle of fresh dill.
