Slow Cooker Pot Roast Recipe
A hearty and flavorful pot roast made easy in the slow cooker.

Main Ingredients
- 3 pounds Chuck Roast trimmed of excess fat
- 1 large Onion sliced
- 4 cloves Garlic minced
- 4 cups Beef Broth
- 1 pound Carrots peeled and cut into chunks
- 1 pound Potatoes cut into chunks
- 2 tablespoons Tomato Paste
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Rosemary
- to taste Salt and Pepper
1. Season the chuck roast with salt and pepper.
2. In a large skillet, sear the roast on all sides until browned.
3. Place the roast in the slow cooker. Add the onions, garlic, carrots, and potatoes.
4. In a bowl, mix the beef broth, tomato paste, thyme, and rosemary. Pour over the roast and vegetables.
5. Cover and cook on low for 8 hours, or until the meat is tender.
6. Serve hot and enjoy!
