Ingredients 

Main Ingredients

  • 3 pounds Chuck Roast trimmed of excess fat
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 4 cups Beef Broth
  • 1 pound Carrots peeled and cut into chunks
  • 1 pound Potatoes cut into chunks
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • to taste Salt and Pepper

Instructions 

  1. 1. Season the chuck roast with salt and pepper.
  2. 2. In a large skillet, sear the roast on all sides until browned.
  3. 3. Place the roast in the slow cooker. Add the onions, garlic, carrots, and potatoes.
  4. 4. In a bowl, mix the beef broth, tomato paste, thyme, and rosemary. Pour over the roast and vegetables.
  5. 5. Cover and cook on low for 8 hours, or until the meat is tender.
  6. 6. Serve hot and enjoy!
