  • 2 pounds red potatoes cut into bite-sized pieces
  • ½ cup mayonnaise
  • ¼ cup dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 stalks celery chopped
  • ¼ cup red onion finely chopped
  • 2 tablespoon fresh dill chopped

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, dijon mustard, and apple cider vinegar.
  3. 3. Add the cooled potatoes, celery, red onion, and fresh dill to the bowl. Mix well.
  4. 4. Season with salt and pepper to taste. Serve chilled or at room temperature.
