Quinoa Salad Recipe
A refreshing and healthy quinoa salad perfect for any meal.

Main Ingredients
- 1 cup Quinoa rinsed
- 2 cups Water
- 1 Cucumber diced
- 1 Red Bell Pepper diced
- ¼ cup Red Onion finely chopped
- ¼ cup Fresh Parsley chopped
- ¼ cup Olive Oil
- 2 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper freshly ground
1. Rinse the quinoa under cold water.
2. In a saucepan, bring the water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for 15 minutes.
3. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and let it cool.
4. In a large mixing bowl, combine the cooled quinoa, cucumber, red bell pepper, red onion, and parsley.
5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
6. Pour the dressing over the salad and toss to combine.
7. Serve immediately or refrigerate for later.
