Instructions
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
4. Using a blender, puree the soup until smooth. Return to the pot.
5. Stir in the milk and season with salt and pepper to taste. Heat through but do not boil.
6. Serve hot and enjoy!
