Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • cup sugar
  • 6 tablespoons melted butter

Filling

  • 16 ounces cream cheese softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream cold

Instructions 

  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  2. In another bowl, beat the softened cream cheese until smooth. Add sugar and vanilla extract, and mix until well combined.
  3. In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Spread the filling evenly over the crust in the springform pan. Smooth the top with a spatula.
  5. Refrigerate the cheesecake for at least 4 hours, or until firm. Serve chilled.
