Minestrone Recipe
A hearty and healthy Italian vegetable soup.

Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 Carrots, diced
- 2 stalks Celery, diced
- 1 Zucchini, diced
- 1 can Diced Tomatoes
- 4 cups Vegetable Broth
- 1 can Cannellini Beans, drained and rinsed
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- 1 cup Pasta (small shapes)
- to taste Salt and Pepper
- 2 cups Spinach or Kale chopped
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until fragrant.
Add carrots, celery, and zucchini. Cook for 5-7 minutes.
Stir in diced tomatoes and vegetable broth. Bring to a boil.
Add beans, oregano, and basil. Simmer for 20 minutes.
Add pasta and cook until tender, about 10 minutes.
Season with salt and pepper. Stir in spinach or kale just before serving.
