Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Milk
  • 2 large Eggs
  • ¼ cup Vegetable oil
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Shredded cheddar cheese
  • 1 small Jalapeño pepper chopped

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a baking pan.
  2. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  3. In another bowl, whisk together milk, eggs, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the corn kernels, shredded cheddar cheese, and chopped jalapeño pepper.
  6. Pour the batter into the prepared baking pan and spread it out evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool slightly before serving. Enjoy!
