Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onions, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
Add cumin and paprika. Stir well.
Add lentils and vegetable broth. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until lentils are tender.
Season with salt and pepper to taste. Serve hot.
