  • 1 tablespoon Olive Oil
  • 1 lb Chicken Breast, diced
  • 1 lb Andouille Sausage, sliced
  • 1 cup Onion, chopped
  • 1 cup Bell Pepper, chopped
  • 1 cup Celery, chopped
  • 3 cloves Garlic, minced
  • 1 cup Tomatoes, diced
  • 2 cups Chicken Broth
  • 1 cup Long Grain Rice
  • 1 teaspoon Cajun Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 pcs Bay Leaves
  • 1 lb Shrimp, peeled and deveined

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chicken and sausage, cook until browned.
  2. Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
  3. Stir in tomatoes, chicken broth, rice, Cajun seasoning, salt, pepper, and bay leaves. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20-25 minutes, until rice is cooked.
  5. Add shrimp and cook for another 5-7 minutes, until shrimp is pink and cooked through.
  6. Remove bay leaves and serve hot.
