Garden Fresh Tomato Soup
A simple, delicious tomato soup made from fresh garden tomatoes.

Main Ingredients
- 6 cups fresh tomatoes, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 teaspoon salt
- 1 teaspoon sugar
- ¼ teaspoon black pepper
- ¼ cup fresh basil, chopped
Heat olive oil in a large pot over medium heat.
Add chopped onions and garlic, sauté until soft.
Add chopped tomatoes, vegetable broth, salt, sugar, and black pepper. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Remove from heat and let cool slightly. Blend the soup until smooth.
Return soup to the pot, reheat if necessary. Stir in fresh basil before serving.
