Ingredients 

Main Ingredients

  • 2 cups Egusi (melon seeds) ground
  • 1 cup Palm oil
  • 1 lb Beef cut into chunks
  • 1 lb Smoked fish deboned
  • 2 cups Spinach chopped
  • 1 large Onion chopped
  • 2 cups Stock beef or chicken
  • 2 tablespoon Crayfish ground
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. Blend the egusi seeds with a little water to form a thick paste.
  2. 2. Heat the palm oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
  3. 3. Add the minced garlic and cook for another minute.
  4. 4. Add the beef chunks and cook until browned on all sides.
  5. 5. Stir in the ground crayfish, salt, and black pepper.
  6. 6. Add the egusi paste and cook for about 10 minutes, stirring frequently.
  7. 7. Pour in the stock and bring to a boil. Reduce heat and simmer for 20 minutes.
  8. 8. Add the smoked fish and chopped spinach. Cook for another 5 minutes.
  9. 9. Adjust seasoning if necessary. Serve hot.
