  • 6 large eggs hard-boiled and chopped
  • ¼ cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon chopped chives optional

  • 8 slices bread your choice

Instructions 

  1. 1. In a mixing bowl, combine chopped eggs, mayonnaise, mustard, and chopped chives.
  2. 2. Season with salt and pepper to taste.
  3. 3. Spread the egg salad mixture onto 4 slices of bread.
  4. 4. Top with the remaining slices of bread to make sandwiches.
  5. 5. Cut sandwiches in half and serve.
