Ingredients 

Main Ingredients

  • 500 g Green Beans trimmed
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion thinly sliced
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Bring a pot of water to a boil. Add green beans and cook for 3-5 minutes until tender-crisp.
  2. 2. Drain and rinse the green beans under cold water to stop the cooking process. Set aside.
  3. 3. In a large mixing bowl, combine the green beans, cherry tomatoes, and red onion.
  4. 4. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss to combine.
  5. 5. Chill in the refrigerator for at least 30 minutes before serving.
