Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 2 cups shredded cooked chicken
  • 1 lime, juiced
  • 1 cup corn kernels
  • 1 cup tortilla chips, crushed
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and red bell pepper. Cook until softened.
  3. Stir in cumin and chili powder. Cook for another minute.
  4. Add chicken broth, diced tomatoes, black beans, and corn. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add shredded chicken and lime juice. Cook until heated through.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with crushed tortilla chips.
