Ingredients

  • 1 lb ground beef
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cups chicken broth
  • 2 cups peeled and diced potatoes
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large pot, cook the ground beef over medium heat until browned. Drain and set aside.
  2. 2. In the same pot, add the onion, carrots, and celery. Cook until tender.
  3. 3. Add the chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. 4. In a small bowl, whisk together the flour and milk until smooth. Gradually add to the soup, stirring constantly.
  5. 5. Add the cooked ground beef back to the pot. Stir in the shredded cheddar cheese until melted. Season with salt and pepper.
  6. 6. Serve hot and enjoy!
