Caldo de Res Beef Soup Recipe
Traditional Mexican beef soup with vegetables.

Main Ingredients
- 2 lbs Beef shank with bone
- 1 whole Onion quartered
- 2 cloves Garlic minced
- 3 whole Carrots cut into chunks
- 2 whole Potatoes cut into chunks
- 2 ears Corn cut into thirds
- 1 whole Zucchini sliced
- 1 bunch Cilantro chopped
- to taste Salt
- to taste Pepper
- 8 cups Water
1. In a large pot, add the beef shank, water, onion, and garlic. Bring to a boil, then reduce heat and simmer for about 1.5 hours.
2. Skim off any foam that forms on the surface.
3. Add the carrots, potatoes, and corn. Continue to simmer for another 30 minutes.
4. Add the zucchini and cilantro. Season with salt and pepper to taste. Simmer for an additional 10 minutes.
5. Serve hot with lime wedges and warm tortillas.
