Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Salsa
  • 4 large Tortillas
  • 1 cup Cheddar Cheese shredded
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the black beans, corn, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
  3. Warm the tortillas in a separate pan or microwave.
  4. Assemble the burritos by placing a portion of the bean mixture in the center of each tortilla. Top with salsa and shredded cheese.
  5. Roll up the tortillas and serve warm.
