Ingredients 

Main Ingredients

  • 4 lbs beef short ribs
  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. Season the short ribs with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat. Brown the ribs on all sides, then remove and set aside.
  4. In the same pot, add chopped onion and cook until softened. Add minced garlic and cook for another minute.
  5. Stir in tomato paste, beef broth, red wine, thyme, and rosemary. Bring to a simmer.
  6. Return the ribs to the pot, cover, and transfer to the preheated oven. Cook for about 3 hours, or until the meat is tender and falling off the bone.
  7. Remove from oven and let rest for a few minutes before serving.
