Ingredients 

Main Ingredients

  • 3 pounds Beef Chuck Roast
  • 2 cups Beef Broth
  • 1 cup Red Wine optional
  • 4 cloves Garlic minced
  • 2 tablespoons Tomato Paste
  • 1 pound Carrots peeled and chopped
  • 1 pound Potatoes peeled and chopped
  • 2 stalks Celery chopped
  • 1 large Onion chopped
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper

Instructions 

  1. 1. Preheat your oven to 325°F (165°C).
  2. 2. Season the beef chuck roast with salt and pepper.
  3. 3. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned.
  4. 4. Remove the roast and set aside. In the same pot, sauté the onions, garlic, and tomato paste until fragrant.
  5. 5. Add the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
  6. 6. Return the roast to the pot and add the carrots, potatoes, and celery.
  7. 7. Cover and cook in the preheated oven for about 4 hours, or until the meat is tender.
  8. 8. Let the roast rest for a few minutes before slicing and serving with the vegetables and sauce.
