Ingredients

  • 1 cup Rolled oats
  • 1 cup All-purpose flour
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • 3 Ripe bananas, mashed
  • 1 Egg
  • cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with paper muffin liners.
  2. In a large bowl, mix together the oats, flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the egg and then add the mashed bananas, oil, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
