Pie Crust
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter cold, cut into cubes
- ¼ cup ice water
Filling
- 6 apples peeled, cored, and sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar packed
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoon all-purpose flour
- 1 tablespoon lemon juice
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine flour and salt for the crust. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough in half and shape into two disks. Wrap in plastic wrap and refrigerate for at least 1 hour.
On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie dish. Transfer dough to pie dish and trim even with edge. Refrigerate while preparing filling.
In a large bowl, toss apples with granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice. Pour into crust-lined pie dish.
Roll out second disk of dough and place over filling. Trim, seal, and flute edges. Cut slits in top. Bake for 45-50 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.
